When I try to add a character to my account, it says the email address can't be changed because it's my primary character.

This means that the character is the primary character of another account. You can log into the other account and change the primary character in the account settings to free it up, e.g. after creating a dummy character on the previous account. If this is not an option, please contact us by submitting a support ticket.
